  • 2 boneless chicken breasts
  • 1 tablespoon olive oil
  • 1 small zucchini
  • 1 medium tomato (diced)
  • ½ cup mozzarella cheese
  • dash garlic powder
  • dash salt
  • dash pepper
  • ½ teaspoon basil
  • ½ teaspoon oregano

Instructions

  1. Preheat your oven to 325 degrees F (165 degrees C).
  2. Butterfly slice the chicken breasts into four thin pieces and season with garlic powder, salt, pepper, basil, and oregano.
  3. Heat olive oil in a frying pan over medium heat. Brown the chicken slices for 2-3 minutes on each side.
  4. In the same pan, sauté the zucchini until soft; add diced tomato and herbs. Cook for another 2-3 minutes.
  5. Place the browned chicken in a baking dish and pour the vegetable mixture over it.
  6. Bake uncovered for 20 minutes. Add mozzarella cheese on top and bake for an additional 5 minutes until melted.
