  • ⅓ cup white onion, chopped
  • 1 jalapeño, finely chopped
  • 2 15 oz black beans, drained and rinsed
  • ¾ cup tomato, chopped
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1 tsp cumin
  • ½ tsp salt
  • 2 Tbsp hot sauce
  • 6 large tortillas (burrito size)
  • 6 tostadas
  • 6 fajita size tortillas (to close the wrap)
  • ⅓ cup sour cream (optional)
  • 1½ cup cheese, shredded (optional)
  • 1½ cup romaine, shredded
  • ½ cup salsa (optional)
  • 1 avocado, sliced thin (optional)
  • 2 Tbsp cilantro, chopped (optional)

Instructions

  1. Prepare all ingredients by rinsing beans and chopping vegetables.
  2. In a large skillet over medium heat, add olive oil and sauté onions until translucent. Then stir in spices, tomatoes, black beans, jalapeños, and hot sauce; simmer for a few minutes.
  3. On a large tortilla, place a scoop of the mixture in the center. Top with desired ingredients, then add a tostada on top.
  4. Layer with a smaller tortilla on top and fold the larger tortilla edges over to seal.
  5. Cook each wrapped tortilla in a heated pan until golden brown on both sides.
