  • 1 cup Kodiak pancake mix (or another favorite pancake mix)
  • 2 teaspoons baking powder
  • ½ teaspoon kosher salt
  • 1 ½ cups blueberries (fresh or frozen)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, beat the eggs until frothy, then mix in the Greek yogurt until smooth.
  3. Sprinkle the pancake mix, baking powder, and salt over the wet mixture; stir until just combined.
  4. Gently fold in the blueberries.
  5. Use a ⅓ cup measuring scoop to drop portions of batter onto the prepared baking sheet, adding extra blueberries on top if desired.
  6. Bake for 20 minutes until tops are golden brown and centers jiggle slightly.
  7. Allow to cool on the baking sheet for about 30 minutes before serving.
