  • 6 chicken tenders (cut into chunks)
  • ½ cup + 1 tbsp balsamic vinegar
  • 2 tbsp honey
  • ¼ tsp dried thyme
  • 4 cups halved cherry tomatoes
  • 1 cup part-skim mozzarella pearls
  • ½ cup fresh basil leaves (chopped)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the balsamic reduction by heating ½ cup balsamic vinegar and 1 tbsp honey in a small saucepan until thickened.
  2. Season chicken chunks with salt, pepper, and lemon seasoning.
  3. In a cast iron skillet, heat olive oil over medium-high heat. Cook chicken until golden brown on both sides, then set aside.
  4. In the same skillet, sauté diced onion until soft. Add minced garlic and cook until fragrant.
  5. Stir in cherry tomatoes, thyme, remaining balsamic vinegar, honey, salt, and pepper; cook until tomatoes soften.
  6. Return chicken to the skillet and top with mozzarella pearls. Cover off heat for cheese to melt.
  7. Drizzle with additional balsamic reduction and garnish with fresh basil before serving.
