Caprese Chicken with Zucchini and Tomatoes Skillet is a vibrant, one-pan meal that combines succulent chicken, fresh zucchini, and juicy tomatoes, all topped with melted mozzarella cheese. This dish is not only quick to prepare but also bursting with flavors that make it perfect for both busy weeknights and special occasions.

  • 1.5 lbs boneless skinless chicken breasts
  • 2 lbs zucchini
  • 1.5 lbs tomatoes
  • 6 oz low-sodium tomato paste
  • 7 cloves garlic
  • 1 tbsp balsamic vinegar
  • 1 tsp dried oregano
  • 9 oz fresh mozzarella cheese
  • Fresh basil
  • 2 tbsp oil (divided)
  • 1/2 tsp salt (divided)
  • Ground black pepper (to taste)

Instructions

  1. Preheat a large deep skillet over medium heat. Add 1 tablespoon of oil and the cubed chicken with salt and pepper. Cook for about 5 minutes until browned.
  2. Push the chicken to one side and add another tablespoon of oil and minced garlic to the empty space. Sauté for about 30 seconds.
  3. Add sliced tomatoes, tomato paste, balsamic vinegar, oregano, salt, and basil to create the tomato base. Cook for 5 minutes.
  4. Stir in cubed zucchini and combine well. Cover and cook on low-medium heat for about 12 minutes.
  5. Top with mozzarella slices, reduce heat to low, cover, and simmer for an additional 5 minutes until melted.
  6. Serve hot, garnished with more fresh basil and black pepper.
