  • 1 white onion, thinly sliced
  • 3 cloves garlic, minced
  • 2 cans (400g each) white beans, drained
  • 1 tbsp balsamic vinegar
  • 2 sprigs fresh rosemary, diced
  • 3 tbsp lighter crème fraîche
  • 20g Pecorino cheese, grated (optional)
  • Salt and black pepper to taste
  • 1 tbsp extra virgin olive oil

Instructions

  1. In a cast iron skillet or casserole dish, heat butter over low heat. Add sliced onions and cook for 30-45 minutes until golden brown.
  2. Stir in balsamic vinegar and continue cooking for another 10 minutes.
  3. Add minced garlic and diced rosemary; cook for an additional minute.
  4. Gently fold in the drained white beans, mashing some with the back of a spoon to create a creamy texture.
  5. Stir in lighter crème fraîche and water until combined.
  6. Grate Pecorino cheese on top (if using), season with salt and pepper, then serve warm over crusty bread or alongside mashed potatoes.
