  • 1/2 cup vegetable oil

  • 1 1/2 cups finely shredded carrots
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar (for cheesecake)
  • 2 tbsp all-purpose flour (for cheesecake)
  • 1/4 cup sour cream

Instructions

  1. Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
  2. In one bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg. In another bowl, beat eggs with both sugars until combined. Stir in vegetable oil and vanilla extract.
  3. Combine dry ingredients with wet ingredients and fold in shredded carrots. Pour into the prepared pan.
  4. For the cheesecake layer, beat cream cheese until smooth. Mix in sugar and flour until combined; add vanilla extract and eggs one at a time. Stir in sour cream before pouring over the carrot cake layer.
  5. Bake for about 50–60 minutes until set with a slight jiggle in the center. Cool gradually in the oven with the door ajar for about 30 minutes before chilling completely.
