  • 2 medium zucchinis
  • 4 cloves garlic
  • 4 tablespoons extra-virgin olive oil
  • 2 oz mozzarella cheese
  • 1 oz Parmesan cheese
  • Fresh basil
  • Kosher salt
  • 1/4 teaspoon crushed red pepper flakes

Instructions

  1. Preheat your oven to 425°F.
  2. Slice zucchinis in half lengthwise and score the flesh side in a crosshatch pattern. Sprinkle with salt and let sit for 15 minutes to release moisture.
  3. In a skillet over medium heat, sauté garlic and red pepper flakes in 2 tablespoons of olive oil until fragrant (about 1-2 minutes). Set aside.
  4. Heat the remaining olive oil in the skillet and cook zucchini halves flesh-side down until golden brown (about 2-3 minutes). Transfer to a baking sheet.
  5. Brush zucchinis with garlic oil and bake for 8-10 minutes until tender. Top with mozzarella and Parmesan cheeses.
  6. Broil for 2-3 minutes until cheese is melted and bubbly. Garnish with fresh basil and serve.
