  • 1 pound spicy turkey sausage (casing removed)
  • 1 cup chopped broccolini
  • 16 ounces pumpkin puree
  • 1/4 cup water
  • 1/4 cup whole milk ricotta cheese
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup shredded cheese (like Mac 'n Cheese blend)
  • 1/2 cup shredded sharp cheddar cheese
  • 4 sage leaves (chopped)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (191°C) and prepare a 9×13-inch casserole dish.
  2. Boil the pasta shells for about 7 minutes, then place them in ice water to stop cooking; set aside.
  3. In a skillet over medium-high heat, brown the turkey sausage while breaking it into smaller pieces. Add broccolini and cook until softened, about 5 minutes.
  4. In the same skillet over medium-low heat, combine pumpkin puree, water, ricotta cheese, and nutmeg until bubbly. Stir in cheeses, sage, salt, and pepper until melted and smooth.
  5. Pour half of the sauce into the casserole dish, then mix the remaining sauce with the sausage mixture.
  6. Stuff each shell with filling and place in the casserole dish. Pour any leftover sauce over the top and sprinkle with additional cheese.
  7. Bake uncovered for 15-20 minutes until bubbly.
