  • 1 lb boneless, skinless chicken breasts
  • 1 medium white onion, diced
  • 3 cups broccoli florets
  • 1 medium spaghetti squash
  • 1 jar Primal Kitchen Garlic Alfredo Sauce (or homemade dairy-free Alfredo)
  • Olive oil, salt, pepper, garlic powder

Instructions

  1. Preheat your oven to 400°F.
  2. Halve the spaghetti squash lengthwise and scoop out seeds. Spray cut sides with oil and place cut side down on a baking sheet.
  3. In a casserole dish, combine chicken breasts and diced onion. Drizzle with olive oil and season with salt and pepper; toss to coat.
  4. Bake both dishes in the oven for about 30 minutes.
  5. Remove from the oven; dice the chicken and scrape spaghetti squash strands into the casserole dish.
  6. Stir in Alfredo sauce, broccoli florets, additional seasoning if needed; mix well.
  7. Return to the oven for another 30 minutes until golden brown on top.
  8. Serve warm and enjoy!
