  • 1 tablespoon olive oil
  • 1 ½ lb boneless skinless chicken breasts (cut into 1” chunks)
  • 1 cup minced yellow onion
  • 1 lb dried medium pasta (such as farfalle or rigatoni)
  • 24 ounces marinara sauce (low or no salt added)
  • 2.5 cups shredded mozzarella cheese
  • ½ cup grated parmesan cheese
  • 1/2 tablespoon garlic (minced)
  • ¾ cup panko bread crumbs
  • ⅛ teaspoon black pepper
  • 1 teaspoon dried basil
  • ½ teaspoon dried oregano
  • ¼ teaspoon red pepper flakes (optional)
  • 4 cups water

Instructions

  1. In a large Dutch oven, melt the butter over medium heat. Add garlic and panko breadcrumbs; toast until golden brown. Set aside.
  2. Raise heat to medium-high and add olive oil. Pat chicken dry and cook until browned, about 5 minutes.
  3. Add minced onion and seasonings; sauté for an additional 3 minutes.
  4. Stir in pasta, marinara sauce, and water; bring to a boil.
  5. Cover and reduce heat to medium, cooking pasta for about half the time indicated on the package.
  6. Remove from heat; let sit covered for about 5 minutes.
  7. Stir in cheeses before serving, topping with toasted panko.
