  • 2 tablespoons arrowroot powder
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons baking powder
  • 1 1/4 cups brown sugar
  • 1 1/2 cups unsweetened applesauce
  • 1/2 cup shredded zucchini
  • 1 cup chocolate frosting

Instructions

  1. Preheat your oven to 350°F (180°C) and grease two 8-inch cake pans.
  2. Combine milk and vinegar in a bowl; whisk and let sit for about 5 minutes.
  3. In a large mixing bowl, mix oat flour, cocoa powder, arrowroot powder, baking soda, and baking powder.
  4. Whisk together the curdled milk mixture, brown sugar, and applesauce in another bowl; then pour into dry ingredients.
  5. Stir until just combined, then gently fold in shredded zucchini.
  6. Divide batter between pans and bake for 35–40 minutes or until a skewer comes out clean.
  7. Cool completely before frosting with chocolate frosting.
