  • 1/3 cup melted butter (or coconut oil/dairy-free butter)
  • 3/4 cup brown sugar (or coconut sugar)
  • 1 1/2 cups overripe bananas (mashed, about 3 large)
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 3/4 cups gluten-free all-purpose flour (or regular flour)
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • For the Cinnamon Sugar Swirl: 1/4 cup white sugar and 2 tsp cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Line a loaf pan with parchment paper.
  2. In a mixing bowl, combine melted butter and brown sugar; mix well. Add mashed bananas, eggs, and vanilla; blend until smooth.
  3. Stir in gluten-free flour, baking soda, cinnamon, and salt until just combined.
  4. Mix white sugar and cinnamon for the swirl; reserve one tablespoon.
  5. Layer half the batter in the loaf pan, sprinkle most of the cinnamon sugar over it, then add remaining batter and top with reserved cinnamon sugar.
  6. Bake for 55-65 minutes or until a toothpick comes out clean. Let cool completely before slicing.
