  • 4 slices thick-cut Turkey Bacon (diced)
  • 1 tablespoon vegetable oil
  • 1 tablespoon butter
  • 4 (1-pound, total) boneless skinless chicken breasts (pounded to ¼-inch thickness)
  • salt and fresh ground pepper (to taste)
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked or sweet paprika
  • 4 ounces cream cheese (softened)
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon dried dill weed
  • ½ teaspoon dried chives
  • 4 ounces shredded cheddar cheese (white or yellow – I use a little of both)
  • chopped fresh parsley
  • sliced green scallions

Instructions

  1. 1. Preheat oven to 400°F.
  2. 2. Grease a 9×13 baking dish with cooking spray.
  3. 3. In a skillet over medium-high heat, cook diced Turkey Bacon until crispy; set aside.
  4. 4. Heat vegetable oil in the same skillet; season chicken breasts with salt, pepper, garlic powder, and paprika.
  5. 5. Cook chicken for 2-3 minutes on one side until golden brown; then flip and add butter to cook the other side for another 2 minutes.
  6. 6. Place cooked chicken in the prepared baking dish.
  7. 7. Mix cream cheese with garlic powder, onion powder, dill weed, and chives; spread over each chicken breast.
  8. 8. Top with Turkey Bacon and shredded cheese before baking for 15 minutes until melted.
