Creamy Spinach and Mushroom Stuffed Spaghetti Squash is a healthy and flavorful dish that brings together the rich tastes of sautéed spinach and mushrooms in a creamy filling, all served in a tender, roasted spaghetti squash.

  • 1 medium spaghetti squash
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 4 cups fresh spinach
  • 1/2 cup cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon nutmeg
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Halve the spaghetti squash lengthwise, scoop out seeds, drizzle with olive oil, and season with salt and pepper.
  3. Place cut side down on a baking sheet and roast for 30-35 minutes until tender.
  4. In a skillet over medium heat, sauté diced onion in olive oil until translucent. Add garlic and mushrooms; cook until browned. Stir in spinach until wilted.
  5. In a mixing bowl, combine cream cheese, Parmesan cheese, nutmeg, and the cooked vegetable mixture; season to taste.
  6. Scrape out squash strands with a fork and mix with the filling until well combined.
  7. Spoon back into squash halves, top with mozzarella, and bake for an additional 10-15 minutes until bubbly.
  8. Serve warm.
