  • 19 ounces canned black beans
  • ½ cup salsa
  • 1 tablespoon taco seasoning
  • 1 tablespoon chipotle pepper in adobo sauce
  • ½ teaspoon garlic powder
  • Olive oil for brushing
  • Flour tortillas
  • Toppings: chopped cilantro, diced tomatoes, non-dairy cheese, avocado, non-dairy sour cream, pickled onions

Instructions

  1. Preheat the oven to 450º F.
  2. Drain and rinse the black beans. In a food processor, blend black beans, salsa, taco seasoning, chipotle pepper, garlic powder, and salt until slightly chunky.
  3. Heat olive oil in a skillet over medium-high heat. Add green onions and sauté until fragrant. Stir in bean mixture and cook for about 5 minutes.
  4. Fill each tortilla with several tablespoons of filling and optionally add cheese. Fold over.
  5. Brush each folded tortilla with olive oil and place on a baking sheet. Bake for 6–8 minutes, flip, then bake another 6–8 minutes until golden brown.
  6. Serve immediately with your choice of toppings.
