  • 3 pounds sirloin steak, cut into bite-sized pieces
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 small sweet onion, thinly sliced
  • 3 cloves garlic, thinly sliced
  • 1 cup unsalted beef stock or broth
  • 1 ounce au jus gravy mix (1 packet)
  • Fresh chopped parsley (optional)

Instructions

  1. In a large bowl, toss the sirloin pieces with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat and sear half of the steak for about 3-4 minutes until browned. Remove from skillet and repeat with remaining steak.
  3. Transfer all seared steak pieces into a 6-quart Crockpot.
  4. Add sliced onion and garlic on top of the steak, tossing gently to combine.
  5. Pour beef stock over the mixture and sprinkle the au jus mix evenly on top.
  6. Lay thin slices of butter over everything.
  7. Cover and cook on HIGH for 3–4 hours or LOW for 6–8 hours until tender.
