  • 3 tbsp Turkey Bacon drippings or avocado oil
  • 1 pound ground venison or your choice of ground meat
  • 4 ribs celery (diced)
  • 1 cup diced bell pepper
  • ½ cup diced onion
  • 3 cloves garlic (finely minced)
  • ¾ tsp paprika
  • ¼ tsp dried oregano
  • ¼ tsp dried thyme
  • ¼ tsp cayenne pepper
  • 1½ tsp salt (divided)
  • 1 tsp garlic powder (divided)
  • ¼ tsp black pepper
  • ¼ cup chicken stock or water
  • 12 oz frozen cauliflower rice
  • Sliced green onions and chopped parsley

Instructions

  1. Preheat a cast iron skillet over medium-high heat. Add oil or drippings along with the ground meat. Season with salt, pepper, and garlic powder. Brown the meat until caramelized.
  2. Reduce heat to medium and add onion, bell pepper, and celery. Cook until vegetables are tender. Stir in minced garlic and spices; cook for another minute.
  3. Add frozen cauliflower rice and chicken stock/water. Season with remaining salt and garlic powder. Stir well and cook until the rice is tender and any liquid has evaporated.
  4. Adjust seasoning as needed and garnish with green onions and parsley before serving.
