Ingredients

Scale
  • 1 cup pancake mix
  • ¾ cup milk
  • 1 large egg
  • 2 tablespoons vegetable oil
  • 3 tablespoons maple syrup, plus extra for serving
  • 2 tablespoons maple sugar or brown sugar (optional, for extra maple flavor)
  • 4 large eggs
  • Salt and pepper to taste
  • 4 slices American cheese
  • 8 strips Turkey Bacon, cooked until crispy or 4 breakfast sausage patties
  • Butter or cooking spray for greasing

Instructions

  1. In a mixing bowl, whisk together pancake mix, milk, 1 egg, vegetable oil, and maple syrup until just combined. Allow to rest for 5 minutes.
  2. Heat a non-stick skillet over medium heat and lightly grease it. Use a cookie cutter or mason jar ring to shape pancakes, pouring about 3 tablespoons of batter into each ring.
  3. Cook pancakes for 2-3 minutes until bubbles form; flip and cook for another 1-2 minutes until golden brown.
  4. In the same skillet, crack eggs (using rings if desired) and season with salt and pepper. Cook until whites are set.
  5. Prepare turkey bacon or sausage according to package instructions.
  6. Assemble each sandwich by layering a pancake, cheese slice, egg, and meat between two pancakes.
