  • ½ cup lemon juice (freshly squeezed)
  • ½ cup gluten-free all-purpose flour (for filling)
  • ⅛ tsp kosher salt (for crust)
  • ⅛ tsp kosher salt (for filling)
  • Powdered sugar (for garnish)

Instructions

  1. Preheat the oven to 350°F and grease an 8×8-inch baking dish lined with parchment paper.
  2. For the crust, beat together butter, sugar, lemon zest, and vanilla until fluffy. Mix in flour and salt until combined. Press into the prepared dish and poke holes with a fork. Bake for 20 minutes until golden.
