  • 1/2 cup tapioca starch
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 egg
  • 1/4 cup warm water
  • 1 tablespoon olive oil

Instructions

  1. In a large mixing bowl, combine gluten-free flour, tapioca starch, baking powder, and salt.
  2. In another bowl, whisk together the egg, warm water, and olive oil until smooth.
  3. Gradually mix the wet ingredients into the dry ingredients to form a soft dough. Adjust consistency with water or tapioca starch as needed.
  4. Shape the dough into a disc and cut it into 8 equal portions.
  5. Roll out each portion to about 1/8-inch thick.
  6. If desired, add garlic and parsley by pressing the mixture onto both sides of the dough.
  7. Heat a cast iron skillet over high heat, brush with olive oil, and cook each piece for about 40 seconds on each side until charred and bubbly.
