Ingredients

Scale
  • 2 servings dry instant ramen noodles (around 140 g)
  • 10 oz extra firm tofu or another protein (sliced)
  • 1 cup vegetable broth
  • 57 tbsp soy sauce
  • 23 tbsp corn starch
  • 2 tbsp rice vinegar
  • Vegetable toppings (e.g., chopped scallions, sesame seeds)

Instructions

  1. In a mixing bowl, whisk together sauce ingredients: soy sauce, vegetable broth, corn starch, rice vinegar, sugar, pepper, chili garlic sauce, sesame oil, and minced garlic.
  2. Boil water in a large pot; add noodles and cook for 2-3 minutes less than package instructions for a chewy texture.
  3. While noodles cook, heat oil in a frying pan over medium-high heat. Sauté sliced tofu or chosen veggies until cooked through.
  4. Pour the prepared sauce into the pan with sautéed ingredients; simmer until slightly thickened.
  5. Add drained noodles to the pan; toss to coat in the sauce and absorb flavors. Garnish with scallions and sesame seeds before serving.
