  • 250g dairy-free block butter (softened)
  • 420g icing sugar
  • 2 teaspoons vanilla bean paste
  • 80g dairy-free vanilla yogurt
  • 100ml dairy-free whipping cream
  • 4 packs of Oreo cookies
  • 1 mug brewed espresso
  • 4 additional Oreo cookies (for decoration)

Instructions

  1. Brew the espresso and let it cool.
  2. In a mixing bowl, beat the softened dairy-free butter, icing sugar, vanilla bean paste, and dairy-free yogurt until smooth.
  3. Whip the dairy-free whipping cream until soft peaks form and fold into the butter mixture.
  4. Quickly dip each Oreo cookie in cooled espresso and layer half in a serving dish.
  5. Spread half of the cream mixture over the Oreos; repeat layers.
  6. Cover and chill for at least 4 hours before serving. Garnish with crushed Oreos.
