Ingredients

Scale
  • 4 red onions, sliced thin
  • 4 tablespoons salted butter
  • 46 slices hearty white bread
  • 3 cups shredded Gruyere cheese
  • 1 teaspoon sugar
  • 2 tablespoons salted butter
  • 2 tablespoons all-purpose flour
  • 1/3 cup apple juice or apple vinegar
  • 1 can beef broth (14.5oz can)
  • 1/2 teaspoon dried thyme leaves
  • 1/4 teaspoon pepper

Instructions

  1. Caramelize the onions: In a Dutch oven, melt 4 tablespoons of butter over medium heat. Add sliced red onions and sprinkle with sugar. Cook for about 35 minutes until golden brown, stirring occasionally.
  2. Prepare the dipping broth: In the same pot, melt 2 tablespoons of butter and whisk in flour until smooth. Add apple juice, beef broth, thyme, and pepper; heat until slightly thickened.
  3. Make the sandwiches: Butter each slice of bread. In a skillet over medium heat, grill one side until golden brown. Flip and layer cheese and caramelized onions before topping with another slice of bread. Grill until both sides are golden and cheese melts.
  4. Serve: Slice sandwiches diagonally and serve warm with the dipping broth.
