  • 2 teaspoons xanthan gum (if needed)
  • 1/4 cup tapioca starch
  • 3 teaspoons instant yeast
  • 1/2 cup dry milk powder
  • 1/4 cup light brown sugar
  • 4 tablespoons unsalted butter (room temperature)
  • 1 egg (beaten)
  • 1 1/4 cups warm milk

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch x 13-inch casserole dish.
  2. In a mixing bowl, combine the gluten free flour blend, xanthan gum, tapioca starch, dry milk powder, instant yeast, and brown sugar. Whisk well.
  3. In another bowl, mix warm milk with apple cider vinegar and let it sit for five minutes. Then add butter and beaten egg.
  4. Combine wet ingredients into dry ingredients until a soft dough forms. If sticky, add more flour.
  5. Roll out the dough to about ¼ inch thick on a floured surface.
  6. Spread softened butter over the rolled dough and sprinkle with brown sugar and cinnamon.
  7. Roll tightly into a log and slice into twelve equal pieces.
  8. Place rolls in the greased dish and cover with plastic wrap, allowing them to rise until doubled in size (about one hour).
  9. Bake for approximately 20 minutes until golden brown.
  10. Prepare icing by mixing sifted confectioners' sugar with butter and cream until smooth.
  11. Drizzle icing over warm rolls before serving.
