  • 1/2 cup white sugar
  • 1/3 cup light brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 3/4 cup gluten-free all-purpose baking flour
  • 1 teaspoon cream of tartar
  • 3/4 teaspoon cinnamon
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt

  2. Beat in the egg and vanilla extract until well combined.
  3. Gradually add dry ingredients, mixing until just combined.
  4. Scoop about 1.5 to 2 tablespoons of dough using a cookie scoop and roll each ball in a cinnamon-sugar mixture.
  5. Chill the rolled dough balls on a lined baking sheet for at least 30 minutes.
  6. Preheat your oven to 350°F (175°C) during the last 15 minutes of chilling.
  7. Bake cookies for 10–14 minutes until edges are lightly golden but still soft in the center.
