  • 1 lb gnocchi (gluten-free if needed)
  • 7 oz vegan sour cream
  • 7 oz vegan cream cheese
  • 6 oz vegan chicken cubes
  • 2 ribs celery, chopped
  • 1/4 cup carrots, shredded
  • 1 handful spinach
  • 3 cups vegetable broth
  • 2 Tbsp olive oil
  • 1 tsp Italian herbs
  • 3 cloves garlic, diced
  • 1/3 cup onions, finely chopped
  • Salt and pepper to taste

Instructions

  1. In a large saucepan over medium heat, sauté chopped celery, garlic, and onions in olive oil for about 2 minutes until fragrant.
  2. Add vegan chicken cubes and season with salt and pepper; cook for another 3 minutes until lightly browned.
  3. Pour in vegetable broth and bring to a boil. Add gnocchi and cook for 2-3 minutes until they float.
  4. Stir in vegan cream cheese and sour cream until smooth. Add shredded carrots, Italian herbs, and spinach; cook for an additional 2 minutes.
