  • 3 cups cauliflower florets
  • 1 cup frozen mixed vegetables (corn, carrots, green beans & peas)
  • 8 ounces cooked chopped chicken breast or leftover turkey
  • 2 tablespoons olive oil
  • 2 teaspoons Better than Bouillon chicken base
  • 2 tablespoons nutritional yeast
  • 1 teaspoon dried onion flakes
  • 2 cloves garlic, crushed
  • 1/4 teaspoon sage
  • 1/4 teaspoon thyme
  • salt and black pepper to taste (optional)

Instructions

  1. Prepare the Creamy Cauliflower Sauce: Cook cauliflower florets in water until fork-tender. Drain and blend with olive oil, nutritional yeast, garlic, onion flakes, sage, thyme, and seasonings until smooth.
  2. Make the Soup Base: In a large pan, sauté frozen vegetables for 1-2 minutes. Add chopped chicken and dissolve the chicken base in hot water before mixing into the pan with the pureed cauliflower sauce. Stir well and heat through for about 5 minutes.
