  • 1 cup mashed sweet potato
  • 2 oz unsweetened dark baking chocolate
  • 1/4 cup creamy cashew or almond butter
  • 1/4 cup pure maple syrup
  • 1 egg
  • 1 egg yolk
  • 1 tsp pure vanilla extract
  • 1/3 cup cacao powder
  • 1 Tbsp coconut flour
  • 1/2 tsp baking soda
  • 1/8 tsp pink salt
  • 1/2 cup dark chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a microwave-safe bowl, melt the dark chocolate until smooth.
  3. In a mixing bowl, combine melted chocolate with sweet potato, nut butter, maple syrup, egg, egg yolk, and vanilla; mix until well combined.
  4. Sift in cacao powder, coconut flour, baking soda, and pink salt; stir gently.
  5. Fold in dark chocolate chips before pouring the batter into a greased baking pan.
  6. Bake for about 25 minutes or until a toothpick comes out mostly clean.
  7. Allow to cool before cutting into squares.
