  • 6 large tortillas
  • 68 ounces shredded cheddar cheese
  • 1 (15-ounce) can black beans (drained and rinsed)

Instructions

  1. Preheat your oven to 425°F.
  2. In a skillet over medium-high heat, brown the ground turkey until fully cooked. Transfer to a plate.
  3. In the same skillet, sauté diced poblano peppers until softened.
  4. Reduce heat to medium-low, add whisked eggs seasoned with salt and pepper. Cook until set, then mix in cream cheese until melted.
  5. Warm tortillas and layer each with shredded cheese, black beans, egg mixture, and turkey.
  6. Roll each tortilla tightly and wrap in foil if baking immediately.
