  • ½ cup peach preserves
  • 2 pounds boneless, skinless chicken thighs
  • 1 medium jalapeno pepper (thinly sliced)
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon soy sauce
  • 1 teaspoon apple cider vinegar
  • ½ teaspoon garlic (minced)
  • ½ teaspoon kosher salt

Instructions

  2. Season the chicken thighs with kosher salt, black pepper, and chili powder on both sides.
  3. Heat olive oil in a skillet over medium-high heat. Cook the seasoned chicken for 4-5 minutes on each side until golden brown.
  4. Add jalapeno slices on top of the chicken and pour the peach glaze over it. Reduce heat to medium-low and simmer for about 5 minutes.
