  • 1 ½ cups blanched fine almond flour
  • 2 large eggs
  • ⅓ cup full-fat sour cream
  • ¾ cup shredded cheddar cheese
  • 2 tbsp melted butter (for brushing)
  • 2 tsp baking powder
  • 1 tsp garlic powder
  • ½ tsp xanthan gum (optional)
  • ¼ tsp sea salt
  • ½ tsp garlic powder
  • ½ tbsp parsley (finely chopped)

Instructions

  1. Preheat the oven to 350°F (180°C) and grease a muffin pan.
  2. In a bowl, whisk together the almond flour, baking powder, garlic powder, xanthan gum (if using), and sea salt.
  3. In another bowl, mix the eggs, sour cream, and melted butter until smooth.
  4. Combine wet and dry ingredients until a thick batter forms. Fold in shredded cheddar cheese.
  5. Scoop approximately 3 tbsp of batter into each muffin cup.
  6. Bake for 18-22 minutes until golden brown and cooked through.
  7. Brush warm biscuits with garlic butter made from melted butter mixed with garlic powder and parsley.
