  • 2 cups yogurt
  • 2 1/2 tsp pure vanilla extract
  • 2/3 cup erythritol (or sugar substitute)
  • 1 tbsp lemon juice (optional)
  • 2 cups almond flour (for crust)

Instructions

  1. If using, mix almond flour and melted coconut oil until slightly sticky; press into the bottom of a springform pan.
  2. Preheat oven to 350°F (175°C) and prepare a water bath.
  3. Blend room-temperature cream cheese, yogurt, vanilla, lemon juice, and erythritol until smooth.
  4. Pour filling over crust (if using) and bake for about 30 minutes until edges are set.
  5. Turn off the oven and let the cheesecake cool gradually for 5 minutes before removing from oven.
  6. Chill in the refrigerator overnight before serving.
