  • 1/4 cup coconut flour
  • 1/2 cup powdered sugar-free sweetener
  • 3/4 tsp baking powder
  • 1/4 tsp salt
  • 6 tbsp unsalted butter (softened)
  • 2 large eggs
  • 1/2 tsp vanilla extract
  • 1/4 cup unsalted or salted butter (for frosting)
  • 1/2 cup powdered sugar-free sweetener (for frosting)
  • 1/8 tsp natural pink food coloring powder (optional)

Instructions

  1. Preheat oven to 350°F and line a cookie sheet with parchment paper.
  2. In a large bowl, combine all dry cookie ingredients: almond flour, coconut flour, powdered sweetener, baking powder, and salt.
  3. Add softened butter, eggs, and vanilla extract; mix until dough forms. Allow the dough to rest for 1-2 minutes.
  4. Shape the dough into 12 balls on the cookie sheet; flatten slightly.
  5. Bake for 8-10 minutes until soft; cool completely.
  6. For frosting, mix softened butter and powdered sweetener until smooth; add food coloring if desired.
  7. Frost cooled cookies generously before serving.
