  • 1 cup unsweetened shredded coconut
  • 1/2 cup chopped pecans
  • 2 cups almond flour
  • 1/2 cup Swerve Sweetener
  • 1/3 cup cocoa powder
  • 8 ounces cream cheese (softened)
  • 3 large eggs
  • 14 tbsp butter (melted, divided)
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup cold coffee or water (coffee helps boost chocolate flavor)
  • 1/2 tsp vanilla extract
  • 1 cup powdered Swerve Sweetener
  • 1/2 cup sugar-free chocolate chips

Instructions

  1. Preheat your oven to 325°F and grease a 9×13 baking pan. Sprinkle the bottom with shredded coconut and chopped pecans.
  2. In a bowl, whisk together almond flour, Swerve Sweetener, cocoa powder, baking powder, and salt. Stir in eggs, melted butter (6 tbsp), coffee or water, and vanilla extract until combined. Spread this batter into the prepared pan.
  3. In another bowl, beat softened cream cheese with the remaining melted butter (8 tbsp) and powdered Swerve Sweetener until smooth. Dollop spoonfuls over the chocolate batter and gently swirl together using a knife.
  4. Sprinkle sugar-free chocolate chips on top and bake for about 35 to 45 minutes; the center should be slightly soft but mostly set.
  5. Allow cooling for at least 20 minutes before slicing into squares.
