  • 1 shredded zucchini (about 1 cup)
  • 1 egg
  • 2 tsp dried minced onion
  • 2 tsp dried minced garlic
  • 2 tsp dried basil
  • 1 tsp salt
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/3 cup grated parmesan cheese
  • 8 oz shredded cheese (two cheese pizza blend of mozzarella and provolone)

Instructions

  1. Preheat your oven to 400°F (200°C) and spray a casserole dish with cooking spray.
  2. In a mixing bowl, combine ground turkey, shredded zucchini, egg, dried minced onion, dried minced garlic, dried basil, and salt. Mix well and form into about 24 meatballs.
  3. Place meatballs in the casserole dish and bake for 30 minutes or until cooked through. Drain any excess liquid.
  4. Top meatballs with marinara sauce and sprinkle with mozzarella and parmesan cheeses. Bake for an additional 10-15 minutes until cheese is melted.
  5. For added crispiness, broil for 3-4 minutes while watching closely.
