  • 1 ½ cups of almond flour
  • ¼ cup of chopped salted pistachios
  • ¼ cup of melted unsalted butter
  • ¼ teaspoon of salt
  • 2 tablespoons of granulated sugar substitute
  • 16 ounces of cream cheese
  • 1 cup granulated sugar substitute
  • 1 cup full fat sour cream
  • 1 ½ cups of heavy whipping cream
  • 2 teaspoons of pistachio extract
  • ¼ teaspoon of sea salt
  • 3 drops of all-natural green food coloring (optional)
  • ¼ cup of chopped salted pistachios (for topping)

Instructions

  1. For the crust, mix almond flour, chopped pistachios, sugar substitute, and salt in a bowl. Add melted butter and combine well. Press into the bottom of individual jars or a pie dish and chill.
  2. To make the filling, beat softened cream cheese with sour cream, sugar substitute, pistachio extract, and sea salt until smooth. Gradually add cold heavy whipping cream while whipping until fluffy.
  3. Fill jars or spread over the crust in a pie dish with the cheesecake mixture. Top with additional chopped pistachios.
  4. Chill for at least 15-20 minutes in jars or 8 hours for a pie before serving.
