  • 1 large egg
  • 1 large egg yolk
  • 1 1/2 tsp vanilla extract
  • 2 3/4 cups almond flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp sugar-free sprinkles
  • 8 ounces softened cream cheese
  • 1/3 cup powdered Swerve Sweetener
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 2 tablespoon heavy whipping cream

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix butter and Swerve until fluffy. Add egg, yolk, and vanilla; combine well.
  3. In another bowl, whisk almond flour, baking powder, and salt; gradually add to wet ingredients. Stir in sugar-free sprinkles.
  4. Press dough into a greased or parchment-lined baking dish and bake for 10-12 minutes until lightly golden.
  5. For the cheesecake filling, blend cream cheese with powdered Swerve until smooth. Add egg, vanilla, and cream; mix well.
