  • 1 tbsp heavy cream
  • 2.5 oz beef rinds (approx. 1 cup)
  • 1/2 cup grated Parmesan

  1. Preheat your oven to 400°F (200°C).
  2. Cut the zucchini into matchsticks.
  3. In a mixing bowl, whisk together the eggs and heavy cream until combined.
  4. Process beef rinds in a food processor until they resemble breadcrumbs; mix in grated Parmesan.
  5. Dip each zucchini stick into the egg mixture, then coat with the beef rind mixture.
