  • 1 lb asparagus
  • 1 (450g) block super firm tofu
  • Juice and zest of 1 lemon
  • 2 tbsp cornstarch
  • 2 tbsp nutritional yeast
  • 1 tbsp avocado oil
  • Salt and freshly cracked black pepper

Instructions

  1. Preheat your oven to 425F. Line a baking sheet.
  2. Trim the woody ends off the asparagus and place on the baking sheet. Drizzle with avocado oil, sprinkle with nutritional yeast, salt, black pepper, and lemon juice; toss to coat. Roast for 10-12 minutes.
  3. In a mixing bowl, combine cornstarch, nutritional yeast, salt, thyme, and black pepper. Coat each tofu piece evenly in the mixture.
  4. Heat oil in a skillet over medium-high heat. Add tofu pieces, cooking for 3-5 minutes per side until golden brown.
  5. Mix sauce ingredients: lemon juice, zest, maple syrup, vegetable broth, cornstarch, salt, and black pepper in another bowl.
  6. Remove tofu from the skillet; sauté garlic briefly before adding the sauce mixture to thicken. Return tofu to the pan; coat well before serving with roasted asparagus.
