  • 4 sweet or hot Italian sausage links (uncooked, butterflied)
  • 1 Tablespoon extra virgin olive oil
  • 1 green bell pepper (diced)
  • 1 red bell pepper (diced)
  • 1 yellow onion (diced)
  • 8 oz mushrooms (sliced)
  • 2 cloves garlic (pressed or minced)
  • 1 Tablespoon balsamic vinegar
  • homemade seasoned salt and pepper
  • 6 oz shredded mozzarella cheese

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with foil.
  2. In a large skillet over medium-high heat, sear butterflied sausages until golden brown on both sides.
  3. Sauté diced bell peppers and onions in olive oil until softened; add sliced mushrooms and garlic until fragrant.
  4. Transfer sautéed vegetables atop the sausages on the baking sheet, sprinkle with mozzarella cheese.
  5. Bake for 10-12 minutes until the cheese is fully melted and bubbly.
