  • 10 ounces frozen cauliflower rice
  • 23 tablespoons oil
  • 2 lbs ground beef
  • 1 small red bell pepper (chopped)
  • 1 small white onion (chopped)
  • 4 tablespoons taco seasoning
  • 1 tablespoon tomato paste
  • ½ cup water
  • 3 cups shredded Colby/Jack cheese
  • 1 cup sour cream

Instructions

  1. Preheat your oven to 350ºF (175ºC).
  2. In a skillet, heat the oil over medium/high heat and add the frozen cauliflower rice until browned. Transfer to a greased casserole dish.
  3. In the same skillet, brown the ground beef with the chopped bell pepper and onion. Drain excess fat if necessary.
  4. Add taco seasoning, tomato paste, and water to the beef mixture. Stir until mostly absorbed, then layer on top of cauliflower rice.
  5. Top with shredded cheese and bake for about 10-15 minutes until bubbly.
  6. Once baked, spread sour cream on top and garnish with your favorite toppings.
