  • 3 large apples
  • 1 onion
  • 5 cloves garlic (or 1 teaspoon garlic powder)
  • ¼ cup olive oil (or aquafaba)
  • ¼ cup maple syrup
  • 3 tablespoons stone-ground dijon mustard
  • Salt and pepper to taste
  • Fresh thyme

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Core and chop the apples into ½” cubes. Slice the carrots into ¼” thick pieces. Dice the onion and finely chop the garlic.
