  • 2 tbsp honey
  • 2 tbsp olive oil
  • 4 garlic cloves (minced)
  • 2 lb chicken breasts (boneless and skinless)
  • 8 oz fresh mozzarella
  • 2 cups grape tomatoes (halved)
  • Fresh basil (for garnish)
  • 1 tsp Italian seasoning
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tbsp Dijon mustard
  • Sea salt (to taste)
  • Black pepper (to taste)
  • 2 tbsp vegetable oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, whisk together balsamic vinegar, honey, olive oil, minced garlic, Italian seasoning, onion powder, garlic powder, and Dijon mustard.
  3. Season chicken breasts with sea salt and black pepper. Heat vegetable oil in a large oven-safe skillet over medium-high heat; sear chicken until golden brown on both sides.
  4. Pour the balsamic marinade over the chicken and bring to a simmer.
  5. Top with mozzarella mixture (torn mozzarella, halved tomatoes, and chopped basil), then bake uncovered for 18-23 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
  6. Allow to rest for 3-5 minutes before serving.
