  • 8 oz fresh mozzarella
  • 2 cups grape tomatoes
  • 4 garlic cloves (minced)
  • 2 tbsp olive oil
  • 2 tbsp vegetable oil
  • 2 tbsp fresh basil (chopped)
  • Sea salt (to taste)
  • Black pepper (to taste)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a mixing bowl, whisk together balsamic vinegar, honey, olive oil, minced garlic, Italian seasoning, onion powder, garlic powder, and Dijon mustard.
  3. Tear mozzarella into pieces and mix with halved grape tomatoes and chopped basil in another bowl; season with salt and pepper.
  4. Heat an oven-safe skillet over medium-high heat with vegetable oil. Season chicken with salt and pepper; sear for 2-3 minutes on each side until golden brown.
