  • 1.5 lbs beef sirloin or flank steak, thinly sliced
  • 3 bell peppers (red, green, yellow), cut into chunks
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1/3 cup soy sauce
  • 1 cup beef broth
  • 2 tablespoons brown sugar
  • Optional: 1 teaspoon sesame oil and red pepper flakes
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water

Instructions

  1. Slice the beef thinly and season with salt and pepper.
  2. Layer the seasoned beef at the bottom of the slow cooker; add bell peppers and onion on top.
  3. In a bowl, whisk together soy sauce, beef broth, garlic, brown sugar, and red pepper flakes.
  4. Pour the sauce mixture over the meat and vegetables in the slow cooker.
  5. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until beef is tender.
  6. In the last 30 minutes of cooking, mix cornstarch with cold water; stir into the crock pot to thicken.
  7. If desired, add sesame oil before serving.
