  • ½ cup buttermilk
  • Zest of 1 lemon
  • ½ cup raspberry jam or preserves
  • ½ cup lemon curd
  • 1 cup unsalted butter, softened for frosting
  • 4 cups powdered sugar
  • 23 tbsp heavy cream or milk
  • 1 tsp vanilla extract for frosting
  • Fresh raspberries for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt; set aside.
  3. In a large bowl, cream softened butter and sugar until fluffy. Add eggs one at a time, followed by vanilla extract and lemon zest.
  4. Alternate adding the dry mixture and buttermilk into the butter mixture until just combined.
  5. Fill each cupcake liner two-thirds full with batter and bake for 18–20 minutes or until a toothpick comes out clean. Cool completely on a wire rack.
  6. Once cooled, core the center of each cupcake and fill with raspberry jam and lemon curd. Replace the tops to seal.
  7. For frosting, beat softened butter until smooth and gradually add powdered sugar, mixing until fluffy. Frost the cupcakes and garnish with fresh raspberries.
