  • 5 cups butternut squash (cubed)
  • 1/2 bulb garlic (bottom half only)
  • 1/3 cup olive oil
  • 1/4 tsp kosher salt
  • 4 leaves sage
  • 8 oz feta cheese
  • 32 oz vegetable broth
  • 2 tbsp honey

Instructions

  1. Preheat your oven to 400°F.
  2. In a Dutch oven, combine olive oil, cubed butternut squash, kosher salt, and sage.
  3. Place feta in the center with halved garlic bulbs around it; cover and roast for 45 minutes to 1 hour.
  4. Remove from oven; squeeze softened garlic into the pot.
  5. Stir in honey and vegetable broth; blend until smooth using a blender or immersion blender.
  6. Adjust seasoning if necessary, then serve hot.
