  • 1 large salmon fillet (about lbs, skinless)
  • 2 cups fresh spinach (chopped)
  • ½ cup feta cheese, crumbled
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 2 tablespoons cream cheese, softened
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh lemon juice
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine chopped spinach, crumbled feta cheese, minced garlic, olive oil, cream cheese, lemon zest, lemon juice, salt, and pepper. Mix until well combined.
  3. Lay the salmon fillet flat on a cutting board and spread the filling evenly over it.
