  • 3/4 cup allulose
  • 1 large egg (room temperature)

Instructions

  1. Preheat your oven to 180C/350F and line a baking tray with parchment paper.
  2. In a large mixing bowl, combine almond butter, allulose, and egg. Mix until well combined; the dough will be thick.
  3. Using a cookie scoop or your hands, form small balls of dough and place them on the prepared baking sheet, spacing them about 3-4 inches apart.
  4. Gently press each ball down into a cookie shape using a fork.
  5. Bake for 8-10 minutes until golden brown at the edges but still soft in the center.
  6. Allow cookies to cool completely on the tray before serving.
